Get the most out of HACCP reporting

HACCP overview

This service is needed for complying with regulations and being able to provide to authorities with proof of the temperature quality of your refrigerated cabinets for any day asked. Moreover, you can see which cabinets are operating in abnormal temperature for any hours of the day selected and check when/if the cabinets are defrosting.

Let’s have a look to an example of an almost ideal HACCP (Hazard Analysis and Critical Control Points) report/dashboard:

But why is this a good example? Because of the following reasons:

· There is neither blue nor red coloring which means that all cabinets are running inside their normal temperature range.

· All cabinets that need to defrost are defrosting at normal intervals and not all at the same time, meaning the compressors are not getting stretched.

· The setpoint of each cabinet is set inside the temperature range which means that setpoint is aligned with the food type in every case.

Now, it is fair to say that most sites can’t run so optimally, and it is normal to see a bit higher temperature than normal right after defrosting and during busy times since the customers are opening frequently the doors of the cabinets. Having said that, a typical site might look more like the below:

By no means is the above site in a bad condition, but it is a more realistic view. Here below is an example of a site in bad condition:

So, what’s wrong here?

· Many cabinets do not even provide data (could be disconnected or changed with other ones while not updating system manager & Alsense accordingly).

· Many cabinets operate outside their normal temperature range.

· Not all cabinets have food types assigned to them.

· There are a couple cabinets offline.

· Setpoints are not always in the middle of the temperature range (high/low).

What could you do in that case?

· Send a technician on site or call the store manager to check the cable connectivity of the cabinets.

· Check if there are any cabinet doors open and the level of the refrigerant in the compressor(s).

· Assign the right food type to the cabinets missing temperature range or send your request to alsensesupport@danfoss.com do it for you.

· Make sure that the setpoints are set correctly according to the food type inside the cabinet. In case the food type has been changed then change the food type in Alsense accordingly.
